This is like 8 servings/drinking cups
1.5 cups of white rice
2 tablespoons of sugar
1 Large cinnamon stick (or 2 small ones), broken up
1-3 teaspoons of vanilla
12 ounce can evaporated milk
12 ounce can sweetened condensed milk
4 cups hot water
2-4 cups of milk (or 2-4 cups of water; it should be 4 cups in total of liquid, so you could have 2 cups of milk and 2 cups of water)
- Boil 4 cups of water
- Wash rice. Place in container/bowl. Add 4 cups of hot water. Break up cinnamon stick(s) and place in. Cover with plastic wrap. Place in fridge. Leave overnight or wait at least 4 hours.
- (Optional) You can remove most of the cinnamon stick(s)
- Blend the rice in separate batches. Puree until it’s very smooth and forms a watery paste like texture. About 3-4 minutes of blending.
- Use a fine strainer or cheese cloth. Pour the blended mixture over a large pitcher. Strain out as much liquid as possible, pushing on the solids with a spatula or spoon
- Repeat for the rest
- Stir in the condensed milk, evaporated milk, and the regular milk/water combination.
- Taste and add sugar or water if needed.
- Chill and add ice.
